Tahini Pasta

First, cook the pasta and broccoli.

Cook the pasta in a pot of boiling water according to the al dente instructions.

Add the broccoli florets to the pot during the last 3 minutes of cook time.

Whisk the tahini, olive oil, lemon juice, maple syrup, lemon zest, salt, and pepper together until thick.

Next, make the tahini sauce.

Stream in ice water until the sauce is creamy, yet pourable.

Next,  cook the broccoli stems, shallots, and garlic.

The shallots should be golden and the stems bright green when they’re done.

Finish with the red pepper flakes.

Add drained pasta and broccoli to the skillet.

Finally, assemble the pasta.

Pour in tahini sauce and reserved pasta water.

Toss the pasta, broccoli, and sauce until everything is well coated.

Finish by stirring in the basil topping.

Season with salt, pepper, and lemon juice to taste, then serve.
