Today, we're making cookies for breakfast!
Make the flax eggs.
Mix together the oats, coconut, baking powder, baking soda, and salt.
Mix together the almond butter, mape syrupsd and vanilla extract.
Add in the flax eggs.
Mix the wet ingredients with the dry ingredients.
Fold in your desired mix-ins (dried fruit, pumpkin/sunflower seeds, and hemp seeds).
Fold the ingredients together.
Scoop the dough onto the baking sheets.
Lightly flatten the top.
Bake for about 18-20 minutes at 350ºF/175ºC.
