Let's make this Instant Pot Lentil Soup!

Begin by adding olive oil to the Instant Pot,

and sauté the onion with a pinch of salt,

then add the garlic.

Also add the carrot and a pinch of salt.

After carrots have just started to soften, deglaze with vegetable broth and stir.

Add the remaining broth.

Add the lentils,

potatoes,

spices,

and bouquet garni.

Add the crushed tomatoes,

and secure the lid. Seal and pressure cook for 12 minutes before allowing a natural pressure release.

 Remove bouquet garni from soup.

Stir in dijon mustard and balsamic vinegar. Add more salt and pepper to taste.
