Lemony  White Bean Dip

Let's make my Lemony White Bean Dip!

Start by toasting pine nuts until golden brown.

Add them to a food processor along with

cannellini beans,

lemon juice,

& salt and pepper.

Blend.

Add a few tablespoons of ice water, and blend again.

Make the  garlic-lemon topping.

Thinly slice garlic cloves,

Shave several strips of lemon peel,

And lightly crush the cumin and coriander seeds.

Gently fry garlic and spices until garlic is turning golden.

Add the lemon peel and chili flakes and fry for another 30 seconds.

Add the white bean dip to a bowl and use the back of a spoon to create waves.

Pour the infused oil on top.

Finally, add the crisp garlic-lemon peel mixture,

and pine nuts.
