Today we're making Vegan Lentil Shepherd's Pie!
Begin by sautéing the onions over medium-high heat.

thyme
rosemary

Pour some red wine and deglaze the pan.

bay leaves

Stir to combine.

Cook the potatoes and cauliflower until soft.
Peel and chop the potatoes.

nutritional yeast
salt, pepper
Blend everything together.
Spoon and spread out the Mashed Potato Topping.
Top with salt, pepper, and fresh thyme leaves.
Drizzle with extra virgin olive oil.
Bake for 20 minutes.
