Maple Roasted Carrots

Roasted carrots are coated in a buttery and sweet maple butter glaze, then finished in the oven until perfectly browned, caramelized, and sticky. A simple yet gourmet vegan side dish for holiday dinners!

– Skinny carrots – Extra virgin olive oil – Kosher salt – Black pepper – Vegan butter – Organic brown sugar – Maple syrup – Dijon mustard – Apple cider vinegar – Garlic cloves – Red pepper flakes – Arrowroot powder – Italian flat-leaf parsley – Sea salt

Ingredients

STEP 1

Scrub your carrots very well (they be dirty!) but don’t peel. Pat them dry. Spread the carrots out between two sheet pans lined with parchment paper.

STEP 2

Toss the carrots with the olive oil, salt, and pepper. Spread out on the pans without overlap.

STEP 3

Roast the carrots in the oven at 425ºF/218ºC for 30 to 35 minutes, without tossing, until browned in spots and tender.

STEP 4

Meanwhile, mix together all the ingredients for the maple butter glaze. When the carrots come out of the oven, drizzle on the maple butter glaze. Gently toss with a spatula to ensure carrots are well coated.

STEP 5

Return to the oven and roast for another 10 minutes, until carrots are caramelized in spots. Finish with flaky sea salt.
