Creamy White Bean Soup

with kale and gremolata

Let's make this Vegan White Bean Soup!

Begin by dicing the onions.

Dice the carrots...

and celery.

Next, mince the garlic,

Finely dice the potato,

Drain and rinse the cannellini beans,

& finely chop the artichokes.

Now Make the Bouquet Garni by tightly tying together the rosemary, sage and bay leaves with kitchen twine.

Sauté the onion, celery, and carrots to a dutch oven.

Now add the garlic and red pepper flakes.

Add the bouquet garni. Stir well, cover and simmer for 15 minutes.

Make the Gremolata:

chop the basil

grate the garlic

sprinkle with flaky sea salt

zest the lemons

Blend half of the soup until thick and smooth.

Chop and add in the kale.

Serve in bowls and sprinkle in the Gremolata and a drizzle of extra virgin olive oil.
