Vegan Potato Salad

First, gather your ingredients.

Pepper

Chives

Mustard

Red Potatoes

Lemon

Tahini

Garlic

Capers

Vegan Yogurt

Red Onion

Dill

Flaky Sea Salt

Jalapeño

Let's make my Vegan Potato Salad!

Rinse potatoes.

Halve them and add them to a large pot of water on the stovetop.

Add salt to the pot and cook the potatoes for 8-12 minutes.

Mix together vegan yogurt,

Meanwhile, make the dressing.

tahini,

mustard,

lemon juice and zest,

garlic,

caper brine,

celery seeds,

salt and pepper,

and freshly chopped dill.

Mix the dressing together.

Chop onion and jalapeño.

Remove the potatoes from the stovetop and drain.

Mix the potatoes and dressing.

Add capers, onion, jalapeños, the rest of the fresh dill, and chives.
