Sweet and Spicy Smashed Vegan Cucumber Salad

Grab 5-6 mini Persian cucumbers, or 1 large English cucumber.

Using the back of a heavy knife, smash the cucumber.

Place the cucumbers in a colander and sprinkle with a bit of salt. Allow them to rest for 15 minutes.

Add the crushed garlic cloves and red pepper flakes to a bowl.

Add in the red wine vinegar and maple syrup

Add the olive oil and whisk to combine.

Slice the peaches.

Drain the cucumbers well and transfer to a bowl.

Add the peaches to the bowl with the cucumbers.

Add in the dressing.

Toss all the ingredients together.

Top with pine nuts and golden raisins.

Top with the basil.

Top with the pitted, sliced olives (optional).

Toss all the ingredients together again.

Top with the diced avocados.

Toss again and enjoy!
