Once oil is shimmering, add cinnamon sticks and spices.
Toss to prevent burning.
Add ginger + garlic, then tomato paste. Cook for two minutes.
Deglaze pan with white wine, then add vegetable broth.
Cover pan, then braise for one hour in oven.
Return pan to oven to braise for 10 minutes.
Add the coconut milk and stir to combine.
Add garam masala.
Remove bay leaves and cinnamon sticks.
Add lemon juice and cilantro.
Serve in a bowl with a dollop of yogurt, fresh herbs, and naan.
