Easy Vegan Brown Butter Peach Cobbler

We'll start by slicing peaches into 1/4-1/2 inch thick slices.

Add the sliced peaches and 1/2 cup blueberries to a  large bowl.

Add in the coconut sugar, cinnamon,  freshly grated nutmeg,  and ground ginger to the bowl.

Gently toss all the ingredients together. Let rest for 30 minutes.

Add the vegan butter to a skillet over medium heat.

Allow the vegan butter to brown for about 5-8 minutes. Pour into a 2-quart baking pan.

In a bowl, combine flour, rolled oats, sugar, baking powder, and salt.

Add in the oat milk, vanilla extract, and almond extract (optional).

Whisk until well-combined.

Dollop the batter on top of the brown butter to swirl it in.

Top the cobbler with the peach-blueberry mixture.

Bake for about 45-50 minutes.

Top with some ice cream and enjoy!
