Vegan Brown Butter Sweet Potato Casserole

The first step is to prick the sweet potatoes all over.

Then bake the sweet potatoes at 425°F for 45-55 minutes until fork tender.

Once cool, remove the sweet potato skins.

Next, mash the sweet potatoes.

Brown the Plant Butter in a light-colored skillet, swirling frequently once it’s melted.

Pour the brown butter into the mashed sweet potatoes and mash together.

Add the vanilla, cinnamon, ginger, nutmeg, salt and pepper. Mash everything together.

Add the mashed sweet potatoes to a baking pan. Smooth out the surface.

For the crumble topping, mix together the oats, nuts, almond flour, spices, and salt.

Then pour in more melted plant butter as well as maple syrup and stir to combine.

Sprinkle the topping evenly over the mashed sweet potatoes.  Bake at 375°F for 35-40 minutes.

Let cool for 15-20 minutes before slicing into the casserole.  Enjoy!
