Vegan Cauliflower Soup

Let's make this Vegan Cauliflower Soup!

Begin by cutting the cauliflower into florets,

And chopping the onion,

and garlic.

Next, drain and rinse the beans,

And prepare the bouquet garni.

Next, heat the olive oil in a large soup pot or dutch oven.

Once hot, cook the onions with a pinch of salt, then add the garlic.

To the sautéed garlic and onions, add vegetable broth,

salt & pepper.

cauliflower florets,

beans,

Measure out 5 tablespoons of nutritional yeast and mix into the soup.

Gently tuck bouquet garni into soup.

Cook soup for 15 minutes then remove the bouquet garni.

Ladle soup into a stand blender and blend until smooth, thick, and creamy.

Add the soup to bowls and top with lemon zest,

chili flakes,

and extra virgin olive oil.
