Vegan Pumpkin Spice Bread

Let's make the Best Vegan Pumpkin Bread you'll ever try!

Start by opening a can of pumpkin purée.

Then stir  vinegar into plant-based milk and set aside.

Combine the dry ingredients in a medium bowl:

flour

baking soda, baking powder and salt

and all of the pumpkin spices

Now, mix your wet ingredients

Aquafaba, brown sugar and oil

Add in the  pumpkin puree,

"buttermilk" & maple syrup,

and vanilla.  Mix until well incorporated.

Gently combine wet and dry ingredients

Pour the batter into loaf pan and bake.

Now, make the Cream Cheese Icing

Vegan butter, vegan cream cheese, powdered sugar, vanilla, salt, lemon juice.

Slather on the Vegan Cream Cheese Icing and scatter with a handful of pepitas.
