Vegan Strawberry Rhubarb Salad

Slice the ends off the rhubarb stalks.

Then, finely chop the rhubarb into bite-sized pieces.

Add the rhubarb to a large bowl.

Add in the orange zest.

Add in the maple syrup.

Add in the orange juice and...

lemon juice.

Toss all the ingredients together. Marinate for 30- 60 minutes.

Toast the hazelnuts and almonds for 8-10 minutes.

Once cooled, chop the nuts.

Slice the stems of the strawberries off.

And slice into quarters.

Finely chop the basil and mint.

Slice the peaches into wedges.

Add the rhubarb mixture to a large bowl.

 Add the strawberries.

Add the sliced peaches.

Add in the basil and mint.

Add in the chopped nuts.

Toss all the ingredients together. Enjoy!
