Thai Butternut Squash Curry with Chickpeas

Ingredients

ginger

garlic

onions

chili paste

chickpeas

chilis

coconut milk

spinach

butternut squash

vegetable broth

carrots

coconut sugar

green onion

Today, we're making a Butternut Squash Chickpea Curry!

Peel and chop the butternut squash into cubes.

Dice the onion and the carrots.

Mince the garlic, ginger, and lemongrass. Thinly slice the Thai chili peppers.

coconut oil

Add in:

salt

garlic, ginger, lemongrass, and chili peppers

onion & carrots

Pour in the vegetable broth.

Add in:

coconut milk

 butternut squash

soy sauce

coconut sugar

Blend roughly half of the curry.

Stir in the chickpeas.

Stir in the spinach, cilantro and Thai basil

Serve the curry over rice.
