Vegan Thai Green Curry

In this recipe Thai aromatics and herbs, green curry paste, and coconut milk bring bold and fragrant flavors that will make your taste buds dance, while a mix of tofu and vegetables  make this a complete dinner.

To start, gather your ingredients.

Slice the tofu into slabs and press out the excess water.

Chop the slabs into cubes.

Add tofu and salt to a pot of boiling water and boil for 2 minutes.

Drain the tofu in a colander.

Add a few spoons of the coconut milk to a large sauté pan over medium-high heat.

Let it bubble for a few minutes before stirring in your green curry paste.

Keep stirring until the paste starts to dry out.

Now pour in the rest of the coconut milk.

Add the lime leaves, sugar, and soy sauce. Let the sauce simmer until it starts to thicken.

Add your vegetables of choice and broth.

Simmer until the vegetables are crisp-tender.

Add the boiled tofu with the vegetables.

Turn off the heat, remove the lime leaves and add Thai basil and lime juice.
