2chipotle peppers in adobo,plus 2 teaspoons adobo sauce*
6garlic cloves,roughly chopped
2teaspoonsorange zest
⅓cup(80 mL) freshly squeezed orange juice
2 ½tablespoonsfreshly squeezed lime juice
1tablespoonSimply Nature Organic Cane Sugar or Light Brown Sugar
1teaspoonground cumin
1teaspoonkosher salt plus more to taste
Freshly cracked black pepper
¼cup(56g) Simply Nature Organic Extra Virgin Olive Oil
Instructions
To a blender or food processor, add the cilantro, chipotle peppers and adobo sauce, garlic, orange zest, orange juice, lime juice, sugar, cumin, salt, a generous amount of pepper, and the olive oil. Blend until relatively smooth, scraping down the sides as needed. Season to taste with more salt and pepper as needed. Store leftovers in a sealed jar for at least a week in the fridge.
