What is the RPL Recipe Club?
Each month, I’ll choose one Rainbow Plant Life recipe that anyone in the RPL community can choose to make.
You can make it just for fun OR you can enter to win an amazing prize each month! This month’s prize is listed below.
How to participate:
Participating is easy! Just follow these steps:
- Sign up for the Rainbow Plant Life newsletter (only newsletter subscribers are eligible to win the monthly prize, though you can of course still participate without being signed up).
- Make this month’s recipe, take a picture of it, and email it to me at contest@rainbowplantlife.com with the subject line “Recipe Club” by 11:59pm on the last day of the month. By sending your picture in via email, you’ll be entered to win a prize.
- For an additional entry, post the pic to Instagram, tag me @rainbowplantlife and use the hashtag #RPLRecipeClub.
At the end of each month, we will randomly select a winner and share our favorite photos here!

June 2023 Recipe: Vegan Blueberry Muffins!
Celebrate blueberry season by making these outrageously good vegan blueberry muffins!
The muffins are delicious on their own but what takes them to the next level is the crunchy and caramelized walnut crumble topping—don’t skip it!

This month, we’re delighted to give away a Staub Heritage All-Day Pan With Domed Glass Lid!
Like the name suggests, you can use this pan all day long. I use mine to sauté vegetables, deep fry cauliflower for Gobi Manchurian, and even make soups or vegan tagine.

We’ll choose the winner at random (based on email entries and instagram entries). The quality of your photography is not a factor but we encourage you to try to make your photos look nice anyways!

This is by for one of the best vegan muffins I’ve ever made. The process involves multiple steps and it can be a messy one but one that is certainly worth it. These muffins were a big hit. They were gone by the time I wanted to put some away to freeze!

I’m generally not a baker, however these muffin were a hit. The only thing I would do different next time I make them is I’d double the topping mix.

These will become a staple in my home.
The morning I made them, my child and I sat out on the porch as it rained and ate warm blueberry muffins in the damp air… it was magical. This morning – 2 days later, they are still moist and wonderful – so I warmed vegan butter and maple syrup in a skillet and grilled myself two – because they were that good.
I cannot wait for this weekend when I switch out the blueberries for cherries and the walnuts for almonds to meet the request.
This will become my go-to!
