RPL Recipe Club – October 2023

For October’s edition of #RPLRecipeClub, we’re making one of my favorite warming fall soups.

What is the RPL Recipe Club?

Each month, I’ll choose one Rainbow Plant Life recipe that anyone in the RPL community can choose to make. 

You can make it just for fun OR you can enter to win an amazing prize each month! This month’s prize is listed below.

How to participate:

Participating couldn’t be easier! Just follow these steps:

  • Sign up for the Rainbow Plant Life newsletter (only newsletter subscribers are eligible to win the monthly prize, though you can of course still participate without being signed up).
  • Make this month’s recipe, take a picture of it, and email it to me at contest@rainbowplantlife.com with the subject line “Recipe Club” by 11:59pm on October 30th. By sending your picture in via email, you’ll be entered to win a prize. 

At the end of each month, we will randomly select a winner and share our favorite photos here!

    October 2023 Recipe: Thai Pumpkin Soup!

    Embrace pumpkin season with open arms and savor this exquisite Thai Pumpkin Soup. It features everything you love about cozy comfort food in one bowl!

    Bursting with proper Thai flavors, this gourmet pumpkin soup is surprisingly easy. It’s made with roasted winter squash, a bundle of aromatics, spices, and coconut milk. Blend them all together and you have a rich and indulgent soup that will keep you coming back for more.

    You must be at least 18 years old to participate.

    I don’t live in the United States. Can I still enter?

    Yes! You can still enter the monthly contest, with a caveat.

    Due to the exorbitant cost of shipping, we can only ship the above prize within the 48 contiguous United States. However, you can still enter to win if you live elsewhere. If your entry is selected as the winner, we’ll send you a payment of $100 in lieu of the prize. Payment will be sent via PayPal.

    How is the winner chosen? 

    We’ll choose the winner at random (based on email entries). The quality of your photography is not a factor but we encourage you to try to make your photos look nice anyways!

      Loved this soup! I had never cooked with lime leaves before and they just had this incredible scent and flavor. I went to my local asian market for the lime leaves and the Thai basil, but I could not find the recommended red curry paste anywhere, so I’ll have to see if I can order that online for next time. The soup is warm (a little spicy) and complex in taste, cozy, and soooo good. I will definitely make this again!

      I loved this recipe! I was worried it was going to be too spicy but it was perfect! The blend of spices was divine.
