Potato Salad! But like a really good one. It’s got lots of fresh and bright flavors, a zingy creaminess that won’t weigh you down, and no weird add-ins like raisins!

What is the RPL Recipe Club?
Each month, I’ll choose one Rainbow Plant Life recipe that anyone in the RPL community can choose to make.
You can make it just for fun OR you can enter to win an amazing prize each month! This month’s prize is listed below.
How to participate:
Participating is easy! Just follow these steps:
- Sign up for the Rainbow Plant Life newsletter (only newsletter subscribers are eligible to win the monthly prize, though you can of course still participate without being signed up).
- Make this month’s recipe, take a picture of it, and email it to me at contest@rainbowplantlife.com with the subject line “Recipe Club” by 11:59pm on the last day of the month. By sending your picture in via email, you’ll be entered to win a prize.
- For an additional entry, post the pic to Instagram, tag me @rainbowplantlife and use the hashtag #RPLRecipeClub.
At the end of each month, we will randomly select a winner and share our favorite photos here!

July 2023 Recipe: Vegan Potato Salad!
Celebrate summer with my Vegan Potato Salad! I’ve tried a lot of potato salads over the years, and this version is definitely my favorite. No overcooked potato pieces smushed together with globs of mayo here.
Instead of the traditional mayonnaise, the dressing for this potato salad is made with creamy tahini and tangy vegan yogurt. It’s incredibly flavorful but won’t weight you down. And there are lots of fun fresh flavors, from dill and chives to capers and lemon.

Being in the South (USA), serving potato salad at family celebratory dinner (4th of July, mothers day, fathers day, birthdays, Thanksgiving, etc) is an absolute staple. Since becoming vegan 2 years ago, I’ve missed out on all of the potato salad indulgence. NOW, with this delicious vegan potato salad recipe, I can enjoy the family tradition once more. Thanks for all your deeply flavorful, vegan recipes! My boyfriend doesn’t like Dill too much (50% meat eater, 50% willing vegan eater) so think I’d scale it back next time. I thought it was delicious as is, but think it’ll still be enjoyable for others that don’t like dill if you don’t put as much.
