July 2023 Recipe: Vegan Potato Salad!

Celebrate summer with my Vegan Potato Salad! I’ve tried a lot of potato salads over the years, and this version is definitely my favorite. No overcooked potato pieces smushed together with globs of mayo here.

potato salad, dill and a spoon in a large bowl.

Instead of the traditional mayonnaise, the dressing for this potato salad is made with creamy tahini and tangy vegan yogurt. It’s incredibly flavorful but won’t weight you down. And there are lots of fun fresh flavors, from dill and chives to capers and lemon.

The blog post has full written instructions, tips for making the recipe, and ingredient substitutions, so be sure to check it out!

    July 2023 Prize:

This month, we’re delighted to give away a Caraway Food Storage Set!

A high-quality set of glass storage containers is essential for every home cook. The large containers are excellent for storing meal preps for the week; the medium-sized ones are perfectly suited for packing lunches like Broccoli Salad or Quinoa Salad; and the small containers can hold your salad dressings like Vegan Ranch or Hummus!

These non-toxic ceramic coated glass containers were designed with Air Release Technology, which keeps food fresh and odors out. Also they’re just very beautiful and will make you feel like you’re eating fancy food.

Also, I never leave online comments but thought what the heck!
I really enjoyed making this potato salad, it wasn’t complicated yet the flavors were out of this world. Definitely giving it a thumbs up. Five star!!

Thanks for your feedback, Carole! :)

So my husbands love language is potato salad and macaroni salad with ruffles original chips 🙄
It takes him back to his childhood and home and family.
I have to say this is his new favorite! That’s saying something! Coming from home made family recipes for all his years. It’s our new go to potato salad.

Hi Tracey, Thank you so much for such a fantastic review! Appreciate you taking the time!

Being in the South (USA), serving potato salad at family celebratory dinner (4th of July, mothers day, fathers day, birthdays, Thanksgiving, etc) is an absolute staple. Since becoming vegan 2 years ago, I’ve missed out on all of the potato salad indulgence. NOW, with this delicious vegan potato salad recipe, I can enjoy the family tradition once more. I absolutely love this recipe, and highly recommend it!

It warms our hearts to hear that, Eileen! Thank you for sharing :)

Thanks for all your deeply flavorful, vegan recipes! My boyfriend doesn’t like Dill too much (50% meat eater, 50% willing vegan eater) so think I’d scale it back next time. I thought it was delicious as is, but think it’ll still be enjoyable for others that don’t like dill if you don’t put as much.

Thank you for trying the recipes, Melissa! We’re glad you enjoyed the potato salad :)

    6. Christina

5 stars. Super easy to make. Everyone loved it even my friends that aren’t vegan. I made it for a 4th of July party.
