It’s so hard to choose a favorite. My go-to’s are the blueberry muffins, the crispy tofu and cabbage slaw with peanut sauce, the lemon asparagus pasta, the high protein smashed edamame toast, but if I really had to choose—the one that I constantly get complimented on and asked to make over and over again—it’d be the spiced chickpea taco with cilantro pesto; it’s one of the easiest but it’s so good!

My favorite so far which I have made about 5 times is the Buffalo Chickpea quesadillas…..I just recently froze some too and they were great when I ate again.

Every recipe of Nisha’s that I’ve made has been wonderful so its hard to pick a favorite. But I think the Tofu Ricotta has been the biggest game changer for me. It’s so versatile ! I fold in everything from roasted tomatoes and garlic to crispy lentils and chives and my very favorite – chopped pear, toasted walnuts and plant based blue cheese!
