Creamy Cabbage Curry. I didn’t believe I would like it as I normally do not like cabbage with tomatoes. I thought why not give it a try and was glad that I did. It was very good until I added the lime juice at the end and then my taste buds thought they were in heaven. It’s even better when it sits for a day as the flavors meld and it is just outstanding. The best ever! I will be making this often. Already have the ingredients to make another batch. I could not find almond butter without sugar so I added half peanut butter and half tahini. One does what one can. Thank you for the recipe and the effort put in to make it superb.

Didn’t see my comment so let me reiterate that the Butternut Squash Curry with Chickpeas is THE best.

  5. Mark Thomas says:

We love everything we’ve tried, but the favorite is chickpea curry. We used dried curry leaves in the recipe once, then switched to fresh curry leaves the second time, and the difference was so noticeable! Go fresh! And whole spices make a huge difference as well. Thank you!

I fell in love with your Hummus! I make it every week… Now for Thanksgiving coming up I’ll be making the scallop potatoes and I just saw the easy fudge recipe (can’t wait).

    Hi Nisha,
I have your Vegan Instant Pot cookbook and the recipes are all great. Recently, I made your Creamy Indian Spiced Corn Soup from your YouTube video Five Cozy Soups everyone should know (8:03) and I have to say that the Curry Leaves are a game changer! Thanks for all the wonderful insight and guidance with spicing things up!

It’s so hard to choose a favorite. My go-to’s are the blueberry muffins, the crispy tofu and cabbage slaw with peanut sauce, the lemon asparagus pasta, the high protein smashed edamame toast, but if I really had to choose—the one that I constantly get complimented on and asked to make over and over again—it’d be the spiced chickpea taco with cilantro pesto; it’s one of the easiest but it’s so good!

My favorite so far which I have made about 5 times is the Buffalo Chickpea quesadillas…..I just recently froze some too and they were great when I ate again.

I purchased your book and look forward to trying many recipes.

Every recipe of Nisha’s that I’ve made has been wonderful so its hard to pick a favorite. But I think the Tofu Ricotta has been the biggest game changer for me. It’s so versatile ! I fold in everything from roasted tomatoes and garlic to crispy lentils and chives and my very favorite – chopped pear, toasted walnuts and plant based blue cheese!
