Maybe because of a phenomenon also known as recency bias, one of my favorite dishes from your countless fantastic recipes is the Creamy Cabbage Curry. Made it last week and absolutely loved it! Even the leftovers were throughly enjoyable, as cooking for one always means that I am cooking for more than just one dinner.

Maybe not coming as a big surprise, another huge hit for me was the Red Lentil Curry! Absolutely spectacular. Thank you for your always inspiring newsletter and, more than anything, amazing vegan recipes. It is much appreciated.

Creamy Cabbage Curry. I didn’t believe I would like it as I normally do not like cabbage with tomatoes. I thought why not give it a try and was glad that I did. It was very good until I added the lime juice at the end and then my taste buds thought they were in heaven. It’s even better when it sits for a day as the flavors meld and it is just outstanding. The best ever! I will be making this often. Already have the ingredients to make another batch. I could not find almond butter without sugar so I added half peanut butter and half tahini. One does what one can. Thank you for the recipe and the effort put in to make it superb.
