Hi Nisha, I love your book and recipes. Some of my favorite recipes are the Jammy Zucchini, which is nice and garlicky, the Pomegranate-Glazed Tofu (I have made the Pomegranate Glaze more than once, to spoon over crunchy Tempeh). I also like the Spicy Mint & Cilantro Sauce, which I spooned over a shredded Tofu Stir Fry, with Baby Bella Mushrooms, Baby Spinach, Red Onion, Garlic, Red Bell Pepper, and cashews, adding Chinese Five Spice, Tamari, a little Chinese Black Vinegar, salt and pepper. I had some leftover stir fry, and had Butter Lettuce wraps.

I look forward to trying more of the recipes soon. Unfortunately, I am highly allergic to all legumes (I can eat tofu, edamame, green beans, and tree nuts). It’s a bummer, and a kind of rare allergy. So I sub whenever I can, to introduce more protein into my meal.

It’s so hard to decide. The recipes I cook most often are braised tofu, peanut noodles and can’t go past the apple crisp. Delish!!! Your recipes are full proof and definitely deliver! Thank you 🙏🏻
